Harvest period: second decade in October Characteristics Colour: straw yellow Bouquet: fresh, pleasing and refined aromas with hints of apple and pear Taste: full, fleshy, soft, good body, intense flavours Production Technique Jovis is produced from a keen selection of hand harvested grapes that grown in the southern hills of Irpinia. The grapes are removed from the rachis and softly pressed and crushed. Only the free-run juice is extracted from the press and then transferred in stainless steel tanks where the alcoholic fermentation takes places before bottling. The winemaking (or vinification) respects the high quality standards of the Italian quality control system “Denominazione di Origine Controllata e Garantita” designed to guarantee the origin of wine for the “Fiano di Avellino”.
